FullSizeRender-2Wherever we travel, we love trying new foods, learning new techniques, and collecting local cookbooks. On our recent visit to Cozumel we positively swooned for poc chuc (roasted pork) and all its delicious side dishes. Sadly, we don’t have regular access to banana leaves, earthen kilns, or 8-hours of cooking time, but we think this simple recipe captures some of the magic of Mayan cuisine. (more…)
